For the tacos

  • 4 slices bacon Can be replaced with turkey bacon or black beans for a meatless option.
  • 2 tbsp canola oil
  • 4 cups potatoes, cut into 1-inch cubes
  • 2.5 tbsp taco seasoning mix Can be homemade using cumin, chili powder, paprika, or spices of your choice.
  • 8 pieces soft corn tortillas (6 inch)
  • 8 pieces eggs, well beaten Scramble lightly for perfect texture.
  • 0.5 cup shredded Monterey Jack cheese Can replace with any cheese of your choice.

Cooking Steps

  • Preheat the oven to 375°F and bake the bacon for about 10 minutes until crispy.
  • In a skillet, heat the canola oil over medium heat and cook the cubed potatoes. Sprinkle with taco seasoning and stir every 5 minutes until soft (about 15-20 minutes).
  • Arrange soft tortillas standing upright in a 13×9-inch baking dish.
  • Scramble the eggs in a skillet over medium heat, removing them from the heat when slightly undercooked.
  • Fill each tortilla with about 1/4 cup of the cooked potatoes, scrambled eggs, chopped bacon, and a tablespoon of cheese.
  • Return the tacos to the oven for another 10 minutes until heated through and cheese is melted.
  • Serve immediately and enjoy!

Notes

Use fresh ingredients from local markets for the best taste. Tacos can be made ahead and stored in the fridge overnight, or frozen for later use. Adjust toppings as desired.
