  • 2 cups mixed greens
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, diced
  • 1 orange, segmented
  • 1 medium avocado, diced
  • 1/4 cup feta cheese
  • 1/4 cup red onion, thinly sliced

For the dressing

  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • to taste salt and pepper

Preparation

  • In a large bowl, combine mixed greens, cherry tomatoes, cucumber, orange segments, avocado, feta cheese, and red onion.
  • In a small bowl, whisk together olive oil, apple cider vinegar, salt, and pepper.
  • Drizzle the dressing over the salad and toss everything together until well coated.
  • Serve immediately for the freshest flavor or let it sit briefly.

Notes

For a vegan option, omit feta or substitute with plant-based cheese. You can also adapt the recipe by adding grilled chicken or using different fruits.
