Ingredients
  

Main Ingredients

  • 4 links Sausages Can use chicken, turkey, or veggie sausages.
  • 4 large Eggs Whisked with salt and pepper.
  • 1 cup Cheddar or American cheese Feel free to substitute with other cheese varieties.
  • 4 pieces Tortillas or flatbreads Choose your favorite type.
  • to taste Salt and pepper For seasoning the eggs.
  • 1 tbsp Cooking oil or butter For toasting the roll-ups.

Instructions
 

Cooking Sausages

  • In a skillet over medium heat, cook the sausages until they are browned and fully cooked, about 5-7 minutes.

Scrambling Eggs

  • In a bowl, whisk together the eggs and sprinkle in some salt and pepper.
  • Pour the eggs into the skillet and scramble until fully cooked, about 2-3 minutes.

Assembling Roll-Ups

  • Lay a tortilla or flatbread on a clean surface.
  • Add a portion of the sausage and scrambled eggs, and top with cheese.
  • Roll the tortilla tightly around the fillings.

Toasting Roll-Ups

  • In the same skillet, add a little oil or butter and toast the roll-ups on each side for about 2-3 minutes until golden brown.
  • Serve warm and enjoy!

Notes

Store leftovers in the fridge or freezer. Reheat in the microwave. Make mini versions for snacks. Pair with fresh fruit or salsa.
