Ingredients
  

For the crust and filling

  • 1 ct refrigerated pie crust
  • 1 cup marinara sauce
  • 1.5 cups shredded mozzarella cheese
  • 0.5 cup pepperoni slices or your favorite toppings
  • 0.5 cup sliced bell peppers
  • 0.5 cup sliced mushrooms
  • 0.25 cup grated Parmesan cheese
  • 1 ct egg for egg wash
  • to taste Italian seasoning

Preparation

  • Preheat your oven to 400°F (200°C).
  • Roll out the refrigerated pie crust and place it into a pie dish, leaving some overhang on the edges.
  • In a large bowl, combine marinara sauce, mozzarella cheese, pepperoni, bell peppers, and mushrooms.
  • Pour the filling into the pie crust.
  • Cover with another pie crust, sealing the edges and cutting slits in the top for steam to escape.
  • Brush the top with beaten egg and sprinkle with Parmesan and Italian seasoning.
  • Bake in the oven for 30-35 minutes until golden brown.
  • Let it cool for a few minutes before slicing and serving.

Notes

Consider pre-assembling and refrigerating the pot pie for 1-2 days before baking. Leftovers can be stored in an airtight container for up to 3 days. For reheating, use the oven for best results.
