  • 1 tablespoon baking powder
  • 1/2 teaspoon salt

Wet Ingredients

  • 1 cup milk Can use plant-based milk for vegan option.
  • 1 large egg Can substitute with flaxseed egg or applesauce.
  • 2 tablespoons melted butter Can substitute with coconut oil or vegan butter.

Other Ingredients

  • as needed Cooking spray or oil for frying
  • as desired Syrup, Nutella, or chocolate sauce for dipping Multiple options for dipping sauces available.

Instructions
 

Preparation

  • In a bowl, whisk together the flour, sugar, baking powder, and salt.
  • In another bowl, mix the milk, egg, and melted butter until well combined.
  • Pour the wet ingredients into the dry ingredients and stir until just combined. Avoid over-mixing.

Cooking

  • Heat a non-stick skillet over medium heat and spray with cooking spray or add oil.
  • Pour about a tablespoon of batter onto the skillet and cook until bubbles form on the surface.
  • Flip the pancake popper and cook until golden brown, about 1-2 minutes per side.
  • Repeat until all batter is used. Serve warm with syrup, Nutella, or chocolate sauce.

Notes

Make these ahead of time and store in the fridge for up to 5 days or freeze for longer storage. Reheat in the microwave for 20-30 seconds.
