  • 2 tablespoons sugar Can reduce sugar or use a sugar alternative.
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C) and grease a mini muffin tin.
  • In a mixing bowl, combine the flour, sugar, baking powder, and salt.
  • In another bowl, whisk together the milk, egg, and melted butter.
  • Pour the wet ingredients into the dry ingredients and mix until just combined; avoid overmixing.

Baking

  • Fill each muffin cup about 3/4 full with the batter.
  • Bake for about 10-12 minutes until golden brown and a toothpick comes out clean when poked.
  • Let them cool slightly before serving warm with syrup or fresh fruit.

Notes

You can make these ahead of time and store them in the fridge for up to a week. Warm them up before serving. For fun variations, try adding chopped nuts or berries to the batter!
