Ingredients
  

Pasta

  • 8 oz rotini pasta Cook according to package instructions.

Vegetables

  • 1 cup cherry tomatoes, halved Adds a pop of sweetness.
  • 1 cup cucumber, diced Crunchy and refreshing.
  • 1 cup bell peppers, chopped You can swap any veggies you have.
  • 1/2 medium red onion, thinly sliced
  • 1/2 cup black olives, sliced

Dressing and Toppings

  • 1/2 cup Italian dressing
  • 1/4 cup Parmesan cheese, grated
  • to taste Salt and pepper Season to taste.

Instructions
 

Preparation

  • Cook the rotini pasta according to package instructions, then drain and let it cool.
  • In a large bowl, combine the cooled pasta, halved cherry tomatoes, diced cucumber, chopped bell peppers, thinly sliced red onion, and sliced black olives.

Mixing

  • Drizzle the Italian dressing over the salad and toss to combine.
  • Sprinkle with grated Parmesan cheese and add salt and pepper to taste.

Chilling

  • Chill the salad in the refrigerator for at least 30 minutes before serving.

Notes

Make ahead for deeper flavors. Store in an airtight container in the fridge for up to 3 days. This salad can be served cold or at room temperature.
