  • ½ cup peanut butter (or nut/seed butter of your choice) Substitute as needed for dietary preferences.
  • ½ cup honey or maple syrup Can swap honey for maple syrup for a vegan option.
  • ¼ cup unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • a pinch salt
  • as desired chocolate chips, dried fruit, or chopped nuts Optional mix-ins for customization.

Preparation

  • In a mixing bowl, stir together the rolled oats and a pinch of salt.
  • In a small saucepan over low heat, combine the peanut butter, honey (or maple syrup), cocoa powder, and vanilla extract. Stir gently until melted and smooth.
  • Pour the melted mixture over the oats and mix thoroughly until all the oats are coated.
  • Scoop out small spoonfuls onto a lined baking sheet.
  • Chill in the fridge for at least 30 minutes or until set.

Notes

These cookies can be stored in an airtight container in the fridge for about a week. They taste even better after sitting for a day to let the flavors meld.
