  • 2 pounds potatoes Russet or Yukon Gold potatoes work well.
  • 1 cup cheddar cheese, shredded Feel free to try different cheeses.
  • 1 cup mozzarella cheese, shredded
  • 1 cup crispy fried onions
  • 1/2 cup sour cream Use low-fat if desired.
  • 1/4 cup butter, melted
  • to taste Salt and pepper
  • for garnish Green onions Optional but recommended.

Preparation

  • Preheat your oven to 350°F (175°C).
  • Cook the potatoes in salted water until tender. Drain and let cool slightly.
  • In a big bowl, mash the potatoes with sour cream, melted butter, salt, and pepper until smooth.
  • Mix in the shredded cheddar and mozzarella cheese.
  • Transfer the potato mixture to a greased baking dish and top with crispy fried onions.

Baking

  • Bake in the oven for about 25-30 minutes, until the cheese is melted and bubbly.
  • Optional: Garnish with chopped green onions before serving.

Notes

You can prepare these potatoes ahead of time and refrigerate. They reheat beautifully and can be customized with leftover veggies. Store leftovers in an airtight container.
