Preparation

  • Cook the macaroni according to the package instructions. Drain it and let it cool.
  • In a large bowl, combine the cooled macaroni with the roasted corn, black beans, diced bell peppers, and red onion.
  • Pour in the creamy Mexican dressing and stir until everything is nicely coated.
  • Season with salt and pepper to taste.
  • If desired, add cooked chicken or ham and mix well.
  • Chill in the refrigerator for at least 30 minutes before serving.

Notes

This salad can be made a day ahead and is perfect for meal prep. Store in an airtight container in the fridge for up to 3 days. For serving, garnish with fresh cilantro or queso fresco.
