  • 2 pieces boneless chicken breasts Tender and flavorful.
  • 8 oz pasta (fettuccine or penne) Choose your favorite type.
  • 2 cups heavy cream Creates a rich sauce.
  • 1 cup Parmesan cheese, grated For a cheesy finish.
  • 3 cloves garlic, minced Enhances flavor.
  • 1 cup sun-dried tomatoes, chopped Adds sweetness and texture.
  • 2 cups spinach Fresh spinach is preferable.
  • to taste none Salt and pepper Season to your preference.
  • to taste none Olive oil for cooking Just a splash.
  • as needed none Fresh basil for garnish Makes it look appealing.

Instructions
 

Preparation

  • Cook the pasta according to the package instructions, then drain and set aside.
  • In a large skillet, heat a bit of olive oil over medium heat.
  • Season the chicken breasts with salt and pepper and cook in the skillet until golden and cooked through, about 6-7 minutes per side. Remove and slice.

Cooking

  • In the same skillet, add the minced garlic and chopped sun-dried tomatoes, sauté for a couple of minutes.
  • Add the spinach and cook until wilted, about 2-3 minutes.
  • Pour in the heavy cream and bring to a simmer, stirring occasionally.
  • Add the grated Parmesan cheese and stir until melted into a creamy sauce.
  • Fold in the cooked pasta and sliced chicken until well combined and coated in the sauce.
  • Garnish with fresh basil before serving.

Notes

Store leftovers in an airtight container in the fridge for 3-4 days or freeze for future meals. Reheat on the stove with a splash of cream if thickened.
