  • 1 lb ground beef Choose fresh and flavorful beef.
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup almond flour Gives a fluffy texture without carbs.
  • 2 large eggs

Seasoning and Glaze

  • 1/4 cup ketchup (low-carb if preferred)
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp Italian seasoning
  • 1/4 cup sugar-free ketchup for glaze Provides sweetness without the carbs.

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large mixing bowl, combine the ground beef, chopped onion, minced garlic, almond flour, eggs, salt, pepper, and Italian seasoning. Mix until well combined.
  • Form the mixture into a loaf shape and place it in a baking dish.
  • Spread the sugar-free ketchup over the top for the glaze.

Baking

  • Bake in the preheated oven for 45-60 minutes, or until the internal temperature reaches 160°F (70°C).
  • Let the meatloaf rest for a few minutes before slicing and serving.

Notes

Make ahead and refrigerate overnight or freeze for later. Store leftovers in an airtight container for 3-4 days and reheat for best results.
