  • 2 cups mashed potatoes cooled leftovers work best
  • 1 cup shredded cheddar cheese
  • 4 slices cooked bacon crumbled
  • 2 tablespoons chopped chives or green onions substitute as preferred
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt adjust to taste
  • 1 large egg
  • 1/2 cup all-purpose flour
  • 1 cup breadcrumbs plain or seasoned
  • Oil for frying—vegetable or canola

Preparation

  • In a large bowl, combine mashed potatoes, cheddar cheese, crumbled bacon, chives, garlic powder, pepper, and salt. Mix in the egg until well blended.
  • Scoop out about 1 tablespoon of the mixture and roll it into balls. If too soft, chill in the fridge for 15-20 minutes.
  • Roll each potato ball in flour, then coat with breadcrumbs. For a crispier texture, double dip: flour → beaten egg → breadcrumbs.
  • Heat about 2 inches of oil in a deep pan over medium heat (around 350°F/175°C). Fry in batches until golden brown, roughly 2-3 minutes per side.
  • Transfer to a paper towel-lined plate to remove excess oil.
  • Serve hot with sour cream, ranch dressing, or your favorite dipping sauce.

Notes

Make ahead by shaping bites and freezing before frying. Store leftovers in an airtight container in the fridge for up to 3 days, and reheat in the oven for 10 minutes at 350°F.
