Ingredients

  • 8 ounces white chocolate
  • 1/2 cup heavy cream
  • 2 tablespoons unsalted butter
  • 1 lemon Zest of 1 lemon Fresh lemon is key for flavor.
  • 1 tablespoon lemon juice
  • to taste Powdered sugar (for rolling) Use generously for coating.

Preparation

  • Chop the white chocolate and place it in a heatproof bowl.
  • In a saucepan, heat the heavy cream and butter over medium heat until it just begins to simmer.
  • Pour the hot cream over the chopped chocolate and let it sit for a minute.
  • Add the lemon zest and lemon juice, then stir until the chocolate is melted and the mixture is smooth.
  • Refrigerate the mixture for about 2 hours, or until firm.
  • Once firm, use a teaspoon to scoop out the mixture and roll it into small balls.
  • Roll each truffle in powdered sugar to coat.
  • Place on a baking sheet and refrigerate until set.

Notes

Truffles can be made ahead of time and stored in an airtight container in the fridge for up to two weeks. Families will enjoy making them together!
