Ingredients
  

Pasta and Vegetables

  • 8 oz pasta (such as rotini or shells)
  • 2 cups corn (fresh, frozen, or canned) Fresh is preferred for best flavor.
  • 1 large bell pepper (diced)
  • 1 cup cherry tomatoes (halved)
  • 1/4 cup red onion (finely chopped)
  • 1/2 cup cilantro (chopped) Substitute with parsley if desired.

Dressing

  • 1/4 cup olive oil
  • 2 tablespoons lime juice
  • 1 teaspoon chili powder
  • to taste salt and pepper

Instructions
 

Cooking Pasta

  • Cook the pasta according to package instructions, then drain and cool.

Mixing Ingredients

  • In a large bowl, combine the corn, diced bell pepper, halved cherry tomatoes, chopped red onion, and cilantro.

Making Dressing

  • In a small bowl, whisk together the olive oil, lime juice, chili powder, salt, and pepper.

Combining Salad

  • Add the cooled pasta to the veggie mixture and pour the dressing over the top.
  • Toss everything together until well combined.
  • Refrigerate for at least 30 minutes before serving.

Notes

This salad can be made a day in advance and stored in an airtight container. Add a splash of lime juice to leftovers for extra freshness!
