Ingredients
  

Pasta and Vegetables

  • 8 oz pasta (rotini or bowtie)
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red bell pepper, diced
  • 1/4 cup red onion, diced Consider using green onions for a sweeter flavor.
  • 1 cup crispy bacon, crumbled

Dressing

  • 1/2 cup mayonnaise Can substitute with Greek yogurt or avocado mash.
  • 1/4 cup Greek yogurt Can substitute with more mayo.
  • 1 tablespoon apple cider vinegar
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions
 

Preparation

  • Cook the pasta according to the package instructions. Drain and rinse under cold water.
  • In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, red bell pepper, red onion, and crispy bacon.
  • In a separate bowl, mix together the mayonnaise, Greek yogurt, apple cider vinegar, salt, and pepper.
  • Pour the dressing over the pasta mixture and toss until evenly coated.
  • Garnish with fresh parsley before serving and chill in the refrigerator for at least 30 minutes.

Notes

The salad can be made a day in advance for improved flavor. Store in an airtight container in the fridge. Leftovers can be enjoyed cold or slightly warmed.
