  • 4 cloves garlic, minced
  • 4 tbsp unsalted butter
  • 2 tbsp extra virgin olive oil
  • ½ tsp salt
  • ¼ tsp freshly ground black pepper
  • 1 tbsp fresh lemon juice

Preparation

  • Wash and slice the zucchinis into thick rounds or half-moons.
  • In a small saucepan over low heat, melt the unsalted butter while adding the minced garlic and let it simmer until fragrant.
  • In a large bowl, combine zucchini slices with olive oil, salt, pepper, and the garlic butter until well coated.
  • Soak the wooden skewers in water for about 30 minutes to prevent burning.
  • Thread the zucchini onto the skewers.

Cooking

  • Preheat grill to medium-high (about 400°F).
  • Grill skewers for about 8-10 minutes, turning occasionally until golden brown.
  • Drizzle fresh lemon juice over the skewers before serving.

Notes

Marinate zucchini in garlic butter for at least 30 minutes for deeper flavors. Store leftovers in an airtight container in the fridge for up to three days. Kids can help stack their own skewers!
