  • 4 large potatoes, peeled and sliced
  • 2 large onions, thinly sliced
  • 2 tablespoons olive oil
  • 1 cup beef broth
  • 1 cup Gruyère or Swiss cheese, grated Use Gruyère for a creamier texture or Swiss as a substitute.
  • Salt and pepper to taste
  • Fresh thyme (optional, for garnish)

Cooking

  • Preheat your oven to 400°F (200°C).
  • In a skillet, heat olive oil over medium heat and add sliced onions. Cook until caramelized, about 15-20 minutes.
  • In a greased baking dish, layer sliced potatoes and caramelized onions.
  • Pour beef broth over the potato and onion layers.
  • Sprinkle grated cheese on top and season with salt and pepper.
  • Cover the dish with aluminum foil and bake for 30 minutes.
  • Remove foil and bake for an additional 15-20 minutes until cheese is bubbly and potatoes are tender.
  • Garnish with fresh thyme before serving.

Notes

Prepping ingredients the night before can make the cooking process faster. Leftovers can be stored in an airtight container for 3-4 days and reheated in the oven for best results.
