  • 8 pieces soft hot dog buns, lightly toasted Lightly toasting helps maintain structure.

Firecracker Sauce

  • ¼ cup mayonnaise Can use light mayo or a Greek yogurt-mayo mix.
  • 2 tablespoons sriracha sauce Adjust according to spice preference.
  • 1 tablespoon honey Balances the heat and adds sweetness.
  • 1 teaspoon smoked paprika Adds a smoky flavor.
  • 1 teaspoon garlic powder Enhances flavor.
  • 1 tablespoon fresh lime juice Brightens the overall flavor.

Toppings

  • 1 cup shredded sharp cheddar cheese Pepper jack for a spicier version.
  • ½ cup diced red onions Adds crunch.
  • ½ cup sliced jalapeños Optional for extra heat.

Instructions
 

Firecracker Sauce Preparation

  • In a small bowl, whisk together mayonnaise, sriracha, honey, smoked paprika, garlic powder, and lime juice until smooth. Adjust spice level to taste.

Topping Preparation

  • Dice red onions, slice jalapeños, shred cheese, and chop cilantro.

Grill Hot Dogs

  • Preheat grill to medium-high heat (about 400°F).
  • Place hot dogs on the grill and cook for 5-7 minutes, turning occasionally until charred.
  • In the last 2 minutes, toast the buns on the grill until lightly golden.

Assemble Hot Dogs

  • Spread firecracker sauce inside each bun, insert a grilled hot dog, and top with cheese, onions, jalapeños, and cilantro.

Serve

  • Serve immediately while hot, with extra sauce if desired.

Notes

You can prep the sauce and toppings ahead of time. Leftovers can be stored separately in the fridge for a few days.
