Ingredients
  

Main Ingredients

  • 8 pieces all-beef hot dogs
  • 8 pieces soft hot dog buns, lightly toasted

Firecracker Sauce

  • ¼ cup mayonnaise Can substitute with Greek yogurt.
  • 2 tablespoons sriracha sauce Add more for extra spice.
  • 1 tablespoon honey
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 tablespoon fresh lime juice

Toppings

  • 1 cup shredded sharp cheddar cheese Or pepper jack for a kick!
  • ½ cup diced red onions
  • ½ cup sliced jalapeños Optional for adding spice.
  • to taste fresh cilantro leaves

Instructions
 

Preparation

  • In a small bowl, whisk together mayonnaise, sriracha, honey, smoked paprika, garlic powder, and lime juice until smooth to make the Firecracker Sauce.
  • Dice the red onions, slice the jalapeños (removing seeds for milder taste), shred the cheese, and chop the cilantro. Set aside.

Grilling

  • Preheat the grill to medium-high heat (about 400°F).
  • Grill the hot dogs for about 5-7 minutes, turning occasionally until charred.
  • Toast the buns on the grill cut-side down during the last 2 minutes of grilling.

Assembly

  • Spread Firecracker Sauce inside each bun, add a grilled hot dog, and top with shredded cheese, diced onions, jalapeños, and cilantro.
  • Drizzle extra sauce on top if desired and serve immediately.

Notes

You can prepare the Firecracker Sauce a day in advance. Store leftovers in an airtight container for up to three days. You can also bake the hot dogs in the oven at 400°F for about 15-20 minutes.
