  • 1 pound ground beef You can substitute with ground turkey or chicken for a leaner option.
  • 4 medium potatoes, thinly sliced
  • 1 large onion, chopped
  • 2 cups shredded cheddar cheese Feel free to use any cheese of your choice.
  • 1 can cream of mushroom soup Can substitute with cream of chicken soup if preferred.
  • 1 cup milk
  • to taste salt and pepper
  • as needed olive oil for cooking Used to sauté the beef and onion.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a skillet, heat some olive oil over medium heat and sauté the ground beef and chopped onion until the beef is browned, about 5-7 minutes. Drain any excess fat.
  • In a large mixing bowl, mix the cream of mushroom soup and milk until combined.
  • Grease a casserole dish and layer half of the sliced potatoes into it.
  • Add the beef mixture and sprinkle half of the shredded cheese on top.
  • Repeat with the remaining potatoes and cheese.
  • Pour the soup mixture over the top, ensuring all potato slices are covered.

Baking

  • Cover the dish with foil and bake for 45 minutes.
  • Remove the foil and bake for an additional 15-20 minutes until the potatoes are tender and the cheese is bubbly.
  • Let it cool slightly before serving.

Notes

This casserole can be made ahead of time by assembling it and refrigerating until ready to bake. Leftovers can be stored in an airtight container in the fridge for up to 3 days. Perfect for meal prepping or freezing for later use.
