  • 1 large head cauliflower Fresh cauliflower is recommended.
  • 1 cup breadcrumbs Feel free to use old breadcrumbs from the pantry.
  • 1/2 cup grated Parmesan cheese Can be substituted with nutritional yeast for a vegan option.
  • 1 tablespoon olive oil Essential for a crunchy exterior.
  • 1 teaspoon garlic powder Adds flavor to the coating.
  • 1 teaspoon paprika For extra flavor.
  • Salt and pepper to taste
  • Dipping sauce of choice Suggested: spicy aioli or ranch.

Instructions
 

Preparation

  • Preheat your oven to 425°F (220°C).
  • Remove the leaves from the cauliflower and cut it into thick slices, about 1-inch thick.
  • In a bowl, mix together breadcrumbs, Parmesan cheese (or nutritional yeast), garlic powder, paprika, salt, and pepper.
  • Brush each cauliflower steak with olive oil on both sides.
  • Dredge each steak in the breadcrumb mixture, pressing lightly to ensure it sticks.

Cooking

  • Place the coated cauliflower steaks on a baking sheet lined with parchment paper.
  • Bake for 20-25 minutes, or until golden and crispy, flipping halfway for even cooking.
  • Serve hot with your favorite dipping sauce.

Notes

You can prepare the steaks ahead of time and refrigerate them before baking. Leftovers can be stored in an airtight container for up to 3 days, and reheated in the oven or air fryer for best texture.
