Ingredients
  

Fritter Batter

  • cup whole milk
  • cup all-purpose flour Can substitute with whole wheat flour.
  • 1 tablespoon granulated sugar
  • 1 tablespoon cornmeal
  • 2 teaspoons baking powder
  • Kosher salt Kosher salt, to taste
  • Freshly ground black pepper Freshly ground black pepper, to taste

Frying Ingredients

  • 2 tablespoons canola or vegetable oil Can be substituted with any neutral oil.
  • 2 cups white onions, chopped About 1 medium onion.

Preparation

  • In a large mixing bowl, blend your flour, sugar, cornmeal, and baking powder until it’s all nice and united.
  • Slowly stream the milk into the dry mix while whisking to create a silky smooth batter.
  • Gently fold in the finely chopped onions, adding a generous sprinkle of salt and black pepper.

Frying

  • Heat the canola oil in a deep skillet to about 350°F.
  • Once the oil is hot, carefully drop spoonfuls of the batter into the skillet, gently flattening them.
  • Fry until they turn a golden brown, then lift the fritters onto paper towels to drain excess oil.

Serving

  • Serve the fritters while hot and enjoy the smiles on everyone’s faces!

Notes

Make these fritters ahead of time and reheat them in the oven at 350°F for about 10 minutes. Store leftovers in an airtight container in the fridge for up to three days, or freeze for later use. Feel free to experiment with herbs and spices.
