  • 2 pieces boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream Can use a lower-fat alternative
  • 1 cup grated Parmesan cheese Alternative cheeses like Cheddar or Mozzarella can be used
  • to taste Salt and pepper
  • as needed Fresh parsley for garnish Optional but recommended!

Cooking

  • Heat olive oil in a skillet over medium-high heat. Season chicken breasts generously with salt and pepper.
  • Add chicken to the skillet and cook until browned (about 6-7 minutes on each side) and cooked through.
  • Remove chicken from the skillet and set aside to rest.
  • In the same skillet, toss in minced garlic and sauté until fragrant (about 1 minute).
  • Pour in heavy cream and bring to a gentle simmer.
  • Stir in grated Parmesan cheese and mix until the sauce thickens.
  • Return chicken to the skillet and coat in the sauce.
  • Garnish with fresh parsley before serving.

Notes

The sauce can be made ahead and stored for up to three days. If it's too thick, add a splash of chicken broth. Leftovers can be reheated and served over pasta or alongside rice and vegetables.
