  • 2 pieces boneless, skinless chicken breasts Can substitute with chicken thighs or tofu.
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced Fresh garlic recommended for best flavor.
  • 1 cup heavy cream To avoid curdling, heat gently.
  • 1 cup grated Parmesan cheese Can be substituted with Pecorino or Nutritional Yeast for a plant-based option.
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper
  • to taste Fresh parsley, for garnish

Instructions
 

Preparation

  • Season the chicken breasts with a pinch of salt and pepper, massaging the spices in.
  • Heat the olive oil in a large skillet over medium-high heat.

Cooking

  • Place the seasoned chicken in the skillet and cook until golden brown, about 6-7 minutes on each side.
  • Remove the chicken from the skillet and set aside.
  • In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant.
  • Pour in the heavy cream and bring to a simmer.
  • Stir in the Parmesan cheese and Italian seasoning, stirring until thickens, about 2 minutes.
  • Return the cooked chicken to the skillet, coating it in the sauce.
  • Garnish with fresh parsley and serve warm.

Notes

This dish can be meal prepped and stored in the fridge for 3-4 days. It also freezes well. Pair with garlic bread or a fresh side salad for a complete meal.
