Main Ingredients

  • 2 cups shredded cooked chicken You can substitute with rotisserie or canned chicken.
  • 1 packet ranch seasoning mix
  • 8 ounces cream cheese, softened Can use reduced-fat cream cheese for a healthier option.
  • 1 cup shredded cheddar cheese
  • 1 cup cooked bacon, crumbled Can substitute with turkey bacon or skip for a lighter option.
  • 1 can (10.5 ounces) cream of chicken soup
  • 1 cup frozen peas
  • 1 cup cooked pasta (optional)
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, combine shredded chicken, ranch seasoning mix, cream cheese, cheddar cheese, bacon, cream of chicken soup, and peas. If you're adding pasta, throw it in there too! Stir until everything is well combined.
  • Transfer this mixture to a greased 9x13 inch baking dish and spread it out evenly.

Baking

  • Bake for 25-30 minutes, or until bubbly and heated through.
  • Garnish with chopped green onions before serving.

Notes

This casserole can be made ahead and stored in the fridge before baking. Leftovers can be stored in an airtight container in the fridge for 3-4 days. For a kid-friendly version, swap bacon for more chicken or add shredded carrots or zucchini.
