  • 2 cups elbow macaroni Cook according to package instructions.
  • 1 cup mayonnaise Can substitute with light or Greek yogurt mayonnaise for a healthier option.
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon sugar
  • 1/2 cup diced celery
  • 1/2 cup diced bell pepper Can replace with diced cucumbers or cherry tomatoes.
  • 1/4 cup diced red onion
  • 1/2 cup sweet pickle relish
  • Salt and pepper to taste

Preparation

  • Cook elbow macaroni according to package instructions. Drain and rinse under cold water.
  • In a large bowl, mix mayonnaise, Dijon mustard, apple cider vinegar, and sugar until smooth and creamy.
  • Add in cooled macaroni, diced celery, bell pepper, red onion, and sweet pickle relish into the dressing. Stir until well coated.
  • Season with salt and pepper to taste.
  • Let the salad chill in the refrigerator for at least 30 minutes before serving.

Notes
