  • 1 can chickpeas, drained and rinsed
  • 2 medium beets, roasted and diced Alternatively, you can use canned beets.
  • 1 cup feta cheese, crumbled Can be substituted with dairy-free feta for a vegan option.
  • 2 cups mixed greens or spinach
  • 1/4 cup red onion, thinly sliced Can be omitted for kids.
  • 1/4 cup fresh parsley, chopped
  • 1 lemon, juiced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions
 

Preparation

  • In a large bowl, combine the chickpeas, roasted beets, feta cheese, mixed greens, red onion, and parsley.
  • In a small bowl, whisk together lemon juice, olive oil, salt, and pepper until emulsified.
  • Drizzle the dressing over the salad and toss gently to combine.
  • Serve immediately or refrigerate for up to an hour before serving.

Notes

For meal prep, store components separately and mix before serving. Leftovers can be kept in an airtight container for up to 2 days.
