Preparation

  • Bring a pot of salted water to a boil and cook the egg noodles according to package instructions. Drain when just al dente, and set aside.
  • Heat a skillet over medium heat and melt the butter.
  • Add the minced garlic and sauté until fragrant, about 2 minutes.
  • Season the chicken breasts with salt and pepper. Add them to the skillet and cook for 6-7 minutes on each side until golden brown and cooked through.
  • Remove the chicken from the skillet and let it rest for a few minutes to retain juices.
  • In the same skillet, toss the cooked noodles to coat in the buttery sauce.
  • Slice the chicken and layer it on top of the noodles. Garnish with parsley if desired.

Notes

Can prepare ahead and store in the fridge for up to 3 days. Reheat gently for best flavor. Add veggies or use whole-grain noodles for an extra nutrition boost.
