  • 2 pieces boneless, skinless chicken breasts Look for organic if possible.
  • 8 oz linguine or spaghetti Feel free to swap with any pasta on hand.
  • 4 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream Can substitute with low-fat milk.
  • 1 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • Salt and pepper to taste Don't shy away from the flavors!
  • Chopped parsley for garnish For a pop of color.

Cooking Process

  • Cook your pasta according to the package instructions; drain and set aside.
  • In a large skillet, heat olive oil and butter over medium heat until it shimmers.
  • Season the chicken breasts with salt and pepper, then add them to the skillet. Sear until browned and cooked through, about 5-7 minutes per side. Remove and slice.
  • In the same skillet, add minced garlic and cook for about 1 minute.
  • Pour in the chicken broth and heavy cream, bringing to a slow simmer.
  • Stir in the grated Parmesan cheese until melted and creamy.
  • Add the cooked pasta and sliced chicken back into the skillet, tossing to combine and coat.
  • Garnish with chopped parsley and serve warm.

Notes

Consider reserving some pasta water for adjusting the dish’s creaminess if needed. Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat with a splash of chicken broth.
