  • 2 cups mashed potatoes Leftover mashed potatoes work great!
  • 1 cup shredded cheese (cheddar, mozzarella, or your choice) Gouda and pepper jack are good alternatives.
  • 1/4 cup flour
  • 1 piece egg
  • to taste salt and pepper
  • as needed for frying oil

Preparation

  • In a bowl, mix together the mashed potatoes, shredded cheese, flour, egg, salt, and pepper until well combined.
  • Heat the oil in a deep frying pan over medium heat.
  • Scoop small amounts of the mixture and form them into balls.

Cooking

  • Fry the balls in batches until golden brown and crispy, around 3-4 minutes per side.
  • Drain on paper towels and serve hot.

Notes

You can make these ahead of time and store them in the fridge before frying. For storage, keep them in an airtight container for a few days. They can be reheated in the oven for the best crispy texture. Frozen leftovers are also a great option, and you can add pureed veggies to the mixture for extra nutrition!
