Muffin Ingredients

  • 2 cups mashed potatoes Use leftover from dinner if available.
  • 1 cup shredded cheese (cheddar) Can substitute with mozzarella or pepper jack.
  • 1/4 cup milk
  • 1/4 cup butter, melted
  • 2 whole eggs
  • 1/2 cup flour
  • 1/2 teaspoon baking powder
  • to taste salt
  • to taste pepper
  • chives or green onions (optional, for garnish) For added flavor and presentation.

Preparation

  • Preheat the oven to 350°F (175°C) and grease a muffin tin.
  • In a large bowl, combine mashed potatoes, shredded cheese, milk, and melted butter. Mix until smooth.
  • Add eggs, flour, baking powder, salt, and pepper. Mix until just combined.
  • Spoon the mixture into the greased muffin tin, filling each cup about 3/4 full.

Baking

  • Bake for 20-25 minutes until tops are golden brown.
  • Let cool slightly, then remove from the tin and garnish with chives or green onions before serving.

Notes

Make a double batch and freeze for quick snacks. Store in an airtight container for up to a week. Kids can help in the kitchen!
