  • 4 pieces ripe bananas, sliced Use overripe bananas for best sweetness.
  • 1 cup all-purpose flour Can substitute with gluten-free flour.
  • 1 cup brown sugar Can use granulated sugar if necessary.
  • 1/2 cup granulated sugar For sweetness balance.
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup milk Can substitute with dairy-free alternatives.
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • to taste Whipped cream or ice cream for serving Optional, but recommended for serving.

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a mixing bowl, toss sliced bananas with brown sugar and set aside for about 10 minutes.
  • In another bowl, mix flour, granulated sugar, baking powder, and salt.
  • In a separate bowl, whisk together milk, melted butter, and vanilla until smooth.
  • Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  • Grease a baking dish and layer the banana mixture at the bottom, then pour the batter over it.

Baking

  • Bake in the preheated oven for 30-35 minutes, or until golden brown on top and the center is set.

Serving

  • Serve warm topped with whipped cream or ice cream.

Notes

You can prep ahead by assembling the cobbler, refrigerating it, and baking just before serving. Double the batch for freezing. Great for using up overripe bananas!
