Ingredients
  

For the batter

  • ¾ cup all-purpose flour Can substitute with gluten-free flour if desired.
  • 1 tablespoon granulated sugar
  • 1 tablespoon cornmeal
  • 2 teaspoons baking powder
  • 1-2 teaspoons salt Add to taste.
  • ¾ cup milk Substitute with almond or oat milk if desired.

For the fritters

  • 1 ½ medium onions, chopped About 2 ½ cups.
  • Oil for frying (vegetable oil) As needed.

Preparation

  • In a mixing bowl, whisk together flour, sugar, cornmeal, baking powder, and salt.
  • Gradually stir in the milk until you have a smooth batter.
  • Fold in the chopped onions until they are well coated.

Cooking

  • Heat a thin layer of oil in a large skillet over medium heat.
  • Drop spoonfuls of the batter into the hot oil, flattening them slightly.
  • Fry for about 2-3 minutes per side until golden and crispy.
  • Drain them on paper towels and serve warm.

Notes

You can batch cook and freeze fritters for later use. Store in an airtight container in the fridge for a few days.
