Ingredients
  

Main Ingredients

  • 1 medium fresh pineapple (about 3 cups chunks) Ripe fresh pineapple is preferred for best flavor.
  • 1 tablespoon olive oil or coconut oil Coconut oil adds a tropical flavor.
  • 0.5 teaspoon ground cinnamon Optional, but enhances flavor.
  • 1 tablespoon honey or maple syrup Optional for added sweetness.
  • 1 pinch salt Enhances sweetness.

Preparation

  • Cut off the top and bottom of the pineapple for stability. Slice off the skin in long strips and cut the pineapple into 1-inch chunks.
  • In a mixing bowl, toss the pineapple chunks with olive or coconut oil, ground cinnamon, honey or maple syrup (if using), and a pinch of salt until coated.

Cooking

  • Preheat the air fryer to 400°F (200°C) for about 2 minutes.
  • Arrange pineapple chunks in the air fryer basket in a single layer. Cook for 8 to 10 minutes, shaking the basket halfway through.
  • If the pineapple isn't caramelized enough after 8 minutes, cook for an additional 2 minutes.

Serving

  • Carefully remove the pineapple chunks from the air fryer and serve warm. They can be enjoyed on their own or with toppings like ice cream or yogurt.

Notes

To make-ahead, cut and toss pineapple with oil and cinnamon up to a day in advance. Store in an airtight container in the fridge. Leftovers can be stored for about 3 days and can be reheated in the air fryer.
